Members of the nightshade family, eggplants (or aubergines) were likely domesticated twice independently in different parts of Asia. While eggplants are perennial in the tropics, in cooler regions such as those found across the northern hemisphere, they are typically grown as annuals.
Eggplants are technically berries, but they are picked before they fully mature so that the numerous hard seeds inside are not consumed. The flowers range in color from white to purple; the leaves are large, orbicular, and coarse. The Long Black Beauty heirloom eggplant is a popular choice because it produces abundant fruit early in the growing season.

How to Grow an Eggplant:
When the soil temperature reaches 21 degrees Celsius, you can sow eggplant seeds directly; otherwise, it is best to start the seeds indoors. Plant the eggplant seeds in containers about 5 millimeters deep about 8–10 weeks before the last expected spring frost. Maintain a comfortable 26 degrees Celsius in a sunny window or under a grow light.
Eggplants have a sporadic germination rate and can take a couple of weeks to germinate. For this reason, it is important to plant high-quality heirloom seeds. So that the seedlings can flourish, it is important to keep them moist and supply them with organic matter. Put the containers outside during the day to gradually expose the plants to the weather. Plant the seedlings in well-drained soil in full sun when the average air and soil temperature reaches 70 degrees, or about 3 weeks after the last frost; give each plant 2-3 feet in all directions for optimal growth. Container gardening is another viable option for eggplant cultivation; northern gardeners often rely on this method to successfully cultivate this heat-loving plant.
Eggplant thrives in the summer heat; row covers, black plastic, or other heat-saving methods may be needed. If temperatures fall below 12 degrees Celsius, cover plants. Once seedlings are formed, mulch them to retain moisture and prevent weeds. Apply compost or organic material once a month and keep the soil evenly moist.
When eggplant skin becomes glossy, it's nearly ripe. If the flesh continues to remain indented after gently pressing the skin, the fruit is ripe.
