Easy Swiss Chard
Swiss chard is a leafy vegetable with a mild flavor that is popular in many cuisines. It's easy to prepare and can be used in place of spinach in most recipes. You can add it to soups, stews, or sauté the leaves with garlic for a side dish.

Ingredients: 1 large bunch of fresh Swiss chard (7 or 8 large leaves),2 tablespoons extra virgin olive oil, 1 clove garlic, sliced, Pinch crushed red pepper, 1/4 teaspoon whole coriander seeds (optional)
Method:
- To prepare Swiss chard: First, rinse the leaves thoroughly. Trim and discard thick stalks from the leaves. Cut stalks into 1-inch pieces; keep leaves whole or tear them into strips.
- Heat olive oil in a sauté pan and cook garlic slices with crushed red pepper flakes and coriander seeds (if using) for about 30 seconds or until garlic is fragrant.
- Add chopped Swiss chard stalks and lower the heat before covering and cooking for 3 to 4 minutes.
- Add chopped chard leaves and toss the oil and garlic in the pan before covering again and cooking for 3 to 4 more minutes (add water if needed).
