Easy Winter White Creamed Corn
There's nothing better than a bowl of creamy, buttery corn on a cold winter night. But who has time to boil a pot of water and wait for the corn to cook? You can have it ready in just minutes with this easy recipe!
Yield: 4 servings
Ingredients: 3 T butter, 1/2 medium onion, chopped small (about a 1/2 cup or as desired), 1 tsp sugar, more if you like it sweeter (taste first), 3/4 tsp salt, 1/8 tsp coarse ground black pepper, 1 cup whole milk, 2 T flour, 1 (11 oz.) can white shoepeg corn, drained (*Save juice / see Note below), 1 T reserved corn juice from the can or as desired for consistency
Method:
- In a small frying pan (or medium, shallow sauté pan) over medium-low heat, melt butter and sauté onion until tender, about 5 minutes. Add sugar, salt, and pepper. Whisk together milk and flour, and stir into the butter and onion mixture.
- Cook over medium-low heat until the mixture thickens. Cook and stir for 2 minutes longer. Stir in drained corn and heat through over low heat.
- Add 1 Tbl. of corn juice from the can or as desired for thickness (you will have a scant 1/4 cup of liquid to play with). Taste and adjust seasonings to your preference!
